A blend made from 3 grape varieties, spread over a selection of 20 parcels in the appellation.

Sight
Deep red with purple highlights

Smell 
Red and black fruits, blackcurrant, blueberry with floral notes

Taste 
Black fruits, slight peppery bitterness. Tannins present and good length.

Terroir

Selection of 20 parcels spread over the Rasteau appellation on 3 different terroirs: 

  • 30% at an altitude of 300 metres on marl and conglomerate
  • 30% on stony clay-limestone hillside, sand and pebbles
  • 40% on old terraces with gravels

Vinification and ageing

Vinification

Determination of harvest dates by daily measurement of polyphenols in the berries.

Limited manipulation of the grapes and fermentation at very low temperature to favor soft diffusion of flavor compounds with daily tasting during maceration.

Cofermentation of the different grapes for more complexity.

Ageing

25% in new French oak (medium toast), 25% demi muids, 50% concrete tanks
