Winemaker and globetrotter Xavier Vignon has spent many years scouring the world’s wine regions in order to put his alchemist-winemaker talents to good use. He has uncovered many a secret during his various explorations which he has brought back here, to his beloved terroir, the Dentelles de Montmirail.
The creation of an orange wine is undoubtedly one of his most highly valued secrets.
The orange wine technique is ancestral and originated in Georgia over 6000 years ago. The technique consists of macerating white grapes, juices and skins in amphora thereby giving the wine its characteristic amber hue, tannic depth and distinctive fleshy character.
Xavier Vignon uses this technique whilst adding to it his own innovative talents: the amphora have been replaced by Wine Globes which are large glass containers that help to preserve the wine’s freshness and acidity. A proportion of the wine spends time in the Vinarium®, a special barrel devised by Xavier Vignon in which other smaller barrels are submerged. The wine is therefore aged in wine, as if in the core of a matrix.
This bespoke orange wine displays magnificent notes of dried apricots and honey intertwined with floral aromas. The rich and luxurious palate is underpinned by an incredibly taut acidity.
