A wine made from vines aged between 80 and 100 years in Gigondas, one of the most beautiful natural sites in the Dentelles de Montmirail massif.

"The 2016 Gigondas from Xavier Vignon kicks off with a spicy touch of clove and cracked pepper, then eases into black cherry fruit, a full-bodied, supple mid-palate and a long, creamy finish with just a touch of warmth. Drink it over the next 5-6 years."

Terroir

Selection of 30 high altitude plots located mainly on terraces near the Dentelles de Montmirail.

The terroirs of the Gigondas appellation are a unique in their geology, with an omnipresence of limestone soils.

The vineyard is set in the Dentelles de Montmirail.

Vinification and ageing

Vinification 

100% destemmed.

Hand harvesting with parcel sorting

Cold start fermentation to favor the soft diffusion of tannins and aromatic conmpounds without extraction iof vegetal aromas.

Ageing

The grapes are co fermented in tanks and, after malolactic fermentation, aged in truncated wooden vats.
