Vinification and aging

Vinification

Roussanne is fermented in oak barrels during 4 months. Clairette and Grenache are fermented at low temperature to preserve their minerality. Picpoul and Bourboulenc are fermented in Wine Globe.

Aging

The majority of the blend is aged in concrete vats and stainless steel tanks.
