A cuvée made from a selection of very old vines in the Cairanne AOC!
This 2016 vintage presents beautiful aromas of lavender, garrigue and flowers. A rich and fresh wine representative of this appellation, which is still unknown to everyone.
91/100 - PARKER
"Flowering garrigue notes bring a lovelytouch to the full-bodied 2016 Cairanne. This is plush and creamy in texture, rich and warm, with a supple finish that suggests early drinking. Don't be tempted to hold it past another few years."
90/100 - JEB DUNNUCK
"The inky colored 2016 Cairanne is a full-bodied effort from Xavier that packs serious depth and richness in its dark, jammy fruit, blueberries, scorched earth and peppery herb-like aromas and flavors. Coming from very old vines and brought up all in concrete tanks, drink this full-bodied, opulent Cairanne over the coming 4-6 years."
Since 2016, Cairanne has become a Cru of Côtes du Rhône. Adjacent to the south of a hilly massif that separates the Aygues and Ouvèze valleys, the appellation extends over the single commune of Cairanne in the north-western part of the Vaucluse.

Vinification & Ageing
In order to optimise co-fermentation, the Grenache, Syrah and Cinsault were kept in cold pre-fermentation for more than 3 weeks.
Fermentation was not started until after the Mourvèdre and Marselan had been harvested, which allowed them to be vinified and matured together in an exceptional way.
